One-Pan Meatballs

I don't know what I ever did without a cast iron pan in my kitchen. We use this at least once a week and, as such, I'm adapting all of our favourite recipes to be one pan wonders.

These meatballs are nothing special - most families have a similar recipe but, they are so hearty; meaty, cheesey and full of flavour, they take 20 minutes max to prepare and cook and are a perfect dinner for busy evenings.

Meatballs (bought or homemade)
200g tomato base (passata or tinned toms with some tomato purée mixed in)
1 ball fresh mozzarella 
Chilli flakes 
1 clove garlic

Preheat your oven to 200C. In a cast iron pan, brown your balls (yep, I went there) and transfer to a bowl. Turn the heat right down and sautée the garlic in some oil before pouring in the passata and adding chilli flakes to taste.

Add the meatballs back into the sauce and, when it's simmering gently, tear the mozzarella over the top. Sprinkle with oregano and pop into the oven for 5-10 minutes until the cheese is molten and lightly browned.
