Green Eggs & Ham

Well, Sam I am not because I love, love, love green eggs and ham. In fact, it's overtaken The CEO Breakfast as my favourite morning meal.

Another one from the I Quit Sugar books, Green Eggs and Ham combines the sugar-free bread I posted here with the kale pesto that appeared here with some perfectly scrambled eggs and some nicely grilled slices of ham. This is the breakfast of champions.

Whack your grill on to a medium-high heat and allow to warm up. In a bowl, crack two eggs, add a splash of cream and a teaspoon of kale pesto and gently whip with a fork until all the pesto is distributed throughout the eggs.

Pop your ham and slice of bread under the grill. Keep an eye on them - we don't want them to char! In a pan (I like the stone ones), melt a knob of butter over a medium heat (never high) and pour in the egg mixture. Once the egg starts to come together at the sides, use a spatula to gently fold the eggs until you have a glistening pile of velvety looking scramble. Remove from the heat when still a bit wet - they will keep cooking on the plate.

Assembly is key here. I butter my toasted bread with some real butter,spread some smashed avocado because I need the fats and top with a torn slice of ham and then pile on the perfectly turned out eggs. The result? An incredibly satisfying and filling meal that takes approximately 8 minutes to make if you have your bread and pesto ready to go.
